Easy White Chicken Chili

Ingredients:
6 cups low sodium organic chicken broth
4 cups cooked shredded chicken
2 cans reduced sodium Great Northern Beans
10 oz green chilies
2 tsp ground cumin
Topping Ideas:
Diced avocado, fresh cilantro, chopped green onions, plain Greek yogurt, low fat shredded cheese

Directions:
Heat all ingredients (except toppings) in a pot over medium-high heat until boiling. Cover and reduce to medium-low for five minutes. Serve with toppings. *Can also be cooked in crockpot on low heat for 4-6 hours.

 

Oven Fajitas

Ingredients:
Seasoning Blend: 1 tbsp chili powder, 1/2 tbsp paprika, 1/2 tsp onion powder, 1/4 tsp garlic powder, 1/4 tsp cumin, 1/4 tsp cayenne pepper, 1/2 tsp sea salt
Fajitas: 2 small onions, 2 medium green bell peppers, 1 medium red bell pepper, 1 pound chicken breast, 1 medium lime
Toppings: diced avocado, plain Greek yogurt, chopped cilantro, salsa, diced green onions
 Directions:
 Preheat oven to 400 degrees. Mix all spices together in a small bowl. Cut onion and bell peppers into thin strips and place in a 9×13 baking dish lined with aluminum foil. Slice chicken into thin strips and place over peppers. Sprinkle spice blend over chicken and peppers. Toss well. Place in oven and bake for 35-40 minutes, stirring halfway through. Remove from oven and squeeze juice from lime over fajitas. Serve over bed of lettuce and top with desired toppings.

 

Turkey Meatballs

Ingredients:
1 pound extra lean ground turkey breast
1/3 cup liquid egg whites
1 bell pepper, diced
½ cup oats, ground in blender
½ cup salsa
1 tsp Mrs. Dash original seasoning

Directions: 
Mix ingredients together until well combined. Shape into balls and place on cookie sheet lined with parchment/wax paper. Bake at 350 degrees for 35-40 minutes.

 

Homemade Pico de Gallo

Ingredients:
5 Roma tomatoes, seeded and diced
½ bunch cilantro, finely chopped
½ red onion, diced
3 garlic cloves, minced
½ lime, juiced
sea salt and pepper to taste
 Directions: 
Toss ingredients together and add in sea salt and pepper to taste. Store in a sealed container in the refrigerator until ready to serve.
